Shell Icing Design - How To Make
The shell icing design is one of the most basic designs for cake decorating, not forgetting cupcake decorating. To make this design, it also uses the #18 decorating tip.  The basic shell design looks like this...  To make the shell, first, squeeze out some icing, allowing it to fan out nicely. Then, slightly lift up the piping bag and bring down the tip to the surface. Do not apply pressure when doing this. Pull away the piping bag without lifting it up again because this will create an unnecessary 'tail'. To make borders using the shell, pipe out multiple shells continuously. The next shell should cover the tail of the previous shell. Ensure that pressure is applied evenly when piping out each shell to get an even look.  You can also do the reverse shell design for borders.  To make a reverse shell, squeeze out some icing and move the piping bag as if to draw a question mark. At the end of the question mark, gradully release pressure and pull the piping bag to the center, down to th surface. A reverse shell design border is where the next shell is the mirror image of the previous shell. When you create them continously, you get a nice looking border.  The fleur-de-lis pattern can be made using the shell tube as well. It is another variation of the shell.  A fleur-de-lis consists of 3 shells. One shell in the middle, and 2 reverse shells on each side. All the shells' tails must meet together to form a point. Great for borders, too. Other icing designs...
