Ice Cream Cupcakes
Contributed by Kerri Burgess, Hawkes Bay, New Zealand  My godson was having his fifth birthday and I wanted to make something different for his party. The idea of Ice Cream that didn't melt was a perfect idea. Flat bottom cones are a must for these to work. Hundreds and thousands to decorate with butter cream icing. I just used a simple vanilla cupcake recipe, chocolate could be used also. Coloured flat bottom ice cream cones work the best. Stand the cones on the tray very carefully and fill each cone about 1/2 - 3/4 full. Bake for 8 - 10mins. Be careful the cones don't brown to much. Butter cream icing whipped till very light in colour. Pipe onto cones once cooled and sprinkle with hundreds and thousands.
