Chocolate Raisin Cupcake Recipe

Here is the recipe to make chocolate raisin cupcake.

Ingredients:

• raisins 50g, diced

• butter 85g

• castor sugar 75g

• orange juice 35ml

• eggs 2 (yolk separated)

• cooking chocolate 100g, thawed

• self raising flour 75g

How to make:

1. Mix orange juice and raisins together. Leave to mix well around 2 hours.

2. Beat butter and half of the sugar until well mixed.

3. Add in the egg yolks and mix again.

4. Add in the chocolate and raisins and mix again.

5. In another mixing bowl, beat the egg white and remaining sugar until fluffy.

6. Add the egg and sugar mixture into the rest of the ingredients. Mix well.

7. Fill up the cupcake liners with the mixture.

8. Bake at 160 degrees for 20 mins or until golden brown.
